Uh, sorry if I have a leaky bottle of bleach in my cart and I don't notice, there's no way in hell I'm buying those groceries, especially if I have an infant to worry about. You don't know bleach didn't soak in around plastic wrap (or that it was liquid tight to begin with), for example. You should have thrown everything out, and you've totally opened the store to major lawsuits.

Indulging "light" racism is a good way to get on a customer's good side. In a way, they're fishing because they want you to make a deal of it, to throw it in everyone's face. If you just smile and nod they think you're in on their stupid ideas and won't put up as much of a fight if there's a conflict. You can also deflect any of their concerns by blaming, with disgust, their issues on "this guy who just got fired, you know one of them".

$100k for a person and their spouse in rural Alabama will buy a 16 room mansion. In relatively low priced for a city Chicago it would cover a nice 4 bedroom house in the near suburbs. Hardly extravagant, but add 3 kids and a need to save for college and retirement and it all gets used up.

Live in the city proper and 2 $100k salaries will get you a brand new 3 bedroom condo. Go over to NYC Manhattan and 2 $100k salaries will get you a 2 bedroom apartment maybe.

So yes, $100k a year isn't out of the question at all if you're supporting a family near a city.

Generally, at the department/single POS store manager level the turnover rate is going to drop substantially. A grunt can be trained in a week, two weeks if they're slow and after six months they're pretty much as good as they're going to get. Managing skills and political maneuvering ability will only tend to improve.

Your best bet I think is to tell them you're very exited about your chain and in 10 years you want to be at the regional manager level. You're glad to have the opportunity to talk with them because of ideas 1, 2, and 3 about improving items x, y and z in the store.

I hate to tell you this, but you've been indoctrinated, there are other ways to run a business than to insist on 100% accountability for minor discretions taken with company funds. All it takes is good decisions with hiring trustworthy people and the proper financial incentives in company growth.
