I have some questions about communication.

How many plays, audibles, and coaching signals are players supposed to know?
Does it depend on the position?
What exactly does the QB say just before the play: just some code words, or the full plan?
How often do codes and audibles change?
How often does a playbook change and the plays a player is supposed to know?
If they do, is it to adapt to the opponent, or is to prevent "espionage"?

How much is said over the radio head sets? Who has a receiver in his helmet? Is it possible to eavesdrop on those?

How much money can an UDFA make before he signs his first big contract?
I mean, he plays lights out in the NFL, pro bowl selection, etc, but simply had bad luck in a lovely college program that made him go unnoticed by the scouts.
And how does that compare to the money a complete bust for a top 3 pick gets? So he doesn't reach any of the incentive clauses.

4th quarter, ~30 seconds left on the game clock, opponent just scored and is ahead, but within a single score.

Why do so many guys run the kick out, and don't settle for the touch back, especially if they are not named Hester?
Surely 3-4 seconds is more valuable in this situation than the small chance you pick up a couple of yards?

What exactly is the difference between "helping the runner," which is a foul, and "driving the pile?"

For example, in yesterday's game CIN @ CHI, at about 4:30 left in the 3rd quarter, some of the Chicago o-line just blatantly have their back towards the pile and are just pushing and pushing backwards. Is that allowed?

Real smart quarterbacks can run a no-huddle offense, with minimal input from an OC during a drive.
The QB can change run plays in the pass plays and vice versa, they can change the blocking scheme (in combination with the center), etc.

Why can't defenses do the same with a smart linebacker? Or does that happen already?

How serious do teams drafting in position 20-32 an analysis of players like Clowney and other top 10 prospects?

I can imagine teams like the Texans and Rams do a very thorough analysis of the top prospects and search for any red flags.
But let's say if Clowney falls to 21 (he won't), are the Packers then "what the hell did all those other teams find out? We don't actually know anything about this guy except his tape and combine numbers, do we take the risk?", or did they spend enough time on each prospect to make a decent decision?

How in demand are good scouts, i.e. the foot soldiers of the front office?
Are they gone the second another clubs offers a few more pennies?
Does quality automatically means an eventual promotion?
Is it a job that requires actual skill or training, or do some people "just have it?"
Is their role diminished in "moneyball-like" front offices?

When talking about pass rushing DE's and OLB's, why is their designation EDGE written in all-caps? Is it an acronym of something, or simply that all the other positions are written in caps as well (due to being acronyms)?
