Why not just get a hydrometer that is calibrated to mash temperature? It's what I use and I love it.

Time for my first "Is my beer going to be okay? :ohdear:" post.

For reasons that we can skip over, I have been off of homebrewing for a little over a year at this point, and am finally back to having time/money for it. I was going to start up a new batch, and found that one of my glass carboys actually still has about 5 gallons of a Quadrupel that I had completely forgotten about.

My lovely girlfriend has actually been keeping water in the airlock when she saw it getting low. It has stayed at an average of 75 degrees the whole time, in a place with zero natural light. The beer is clear. Nothing growing on top. I haven't opened it up to smell it, but everything LOOKS normal. I am just worried that the fact that it has been sitting on trub for over a year might cause problems with the actual flavor.

What say you goons? Should I just go ahead and bottle it? If so, do I need to toss in more yeast or something for priming, or will year old yeast wake back up when it gets new priming sugar?

For what it's worth, I kept getting what I considered a "weird flavor" that I couldn't really pin down in my brews until I started double pitching yeast/creating starters. The first batch I used an actual starter instead of a single vial of yeast, was a night and day difference.

Hey homebrew Goons.

I have been brewing off an on for about a year, mostly extract, steeping with specialty grains. Bottling only (ugh). I however recently got a nice bonus from work, and want to spend a chunk of it upgrading to all-grain, brewing 10 gallon batches sometimes, and kegging. I'd like to get everything that I need, including a chest freezer/fermentation chamber/kegerator. My max budget is $2,000 which I would imagine should be more than enough (right? Right...?)

What I have currently is basically just a pretty good starter kit: http://www.austinhomebrew.com/product_info.php?cPath=178_33_52&products_id=12922

Here's what I am looking at getting so far:

2l Erlenmeyer flask: http://www.austinhomebrew.com/product_info.php?cPath=178_33_66_554&products_id=1506
Stir plate: http://www.austinhomebrew.com/product_info.php?cPath=178_33_66_554&products_id=13630
Stir bar: http://www.austinhomebrew.com/product_info.php?cPath=178_33_66_554&products_id=10920
15 gallon brew pot/mash tun: http://www.austinhomebrew.com/product_info.php?cPath=178_33_463&products_id=12894
Kettle Screen: http://www.austinhomebrew.com/product_info.php?cPath=178_33_82_88&products_id=12106
High output burner: http://www.austinhomebrew.com/product_info.php?cPath=178_33_415&products_id=10472
2 more 6 gallon glass carboys: http://www.austinhomebrew.com/product_info.php?cPath=178_33_464&products_id=508
Double kegerator conversion kit: http://www.austinhomebrew.com/product_info.php?cPath=178_40_271_419&products_id=12951
Third keg: http://www.austinhomebrew.com/product_info.php?cPath=178_40_271_560&products_id=13257
20lb CO2 tank(like 20% more expensive than the 10lb, so why not?): http://www.austinhomebrew.com/product_info.php?cPath=178_40_271_275_273&products_id=1179
Temp Controller: http://www.austinhomebrew.com/product_info.php?cPath=178_40_366&products_id=12193
Drip tray: http://www.austinhomebrew.com/product_info.php?cPath=178_40_271_129_281&products_id=10670

I am obviously missing the chest freezer, but am I missing anything else? How big of a freezer would I want assuming that I may end up with a 5 keg setup at some point, so might as well buy a freezer to fit now?

Anything glaringly wrong with that list?

Thanks in advance. I am excited.

Thanks for all the advice. Huh. Plastic it is then I guess.

As for the fridge, I live in Texas, so definitely need one for fermenting in the summers (Late February-Mid November). Should I just get 2 medium size-d ones, with a controller on 1 for fermenting, and then the other stock for serving?

I am not big on messing around with hardware myself, so not keen on making my own temp controller or stir plate. Happy to shell out the money to not have to think about it.

One 15-gallon brewpot will get you into BIAB territory, but if you're thinking of a more traditional three-vessel all-grain setup, you'll need three vessels.

I did 1 boil in a bag before, and it was kind of a big sticky, hot, awkward mess. With the big brew pot and screen, could I not just drain the runnings into a bucket from the pot, rinse the pot, add wort back and boil?
