There was four days of sailing between meeting Aokiji and getting to Water 7 and an undetermined amount of time between Thriller Bark and meeting Caimie. However, you're right. The longest passages of time are actually in between the islands and, thus, off screen.

I am totally ready to be completely disappointed by the Funimation version of Kokoro no Chizu. (I really hope I'm wrong and it ends up being awesome)

The 8th movie is a trainwreck. It's not even a very entertaining trainwreck and they cut out some of the best parts of the arc, like Mr. Prince.
