Even if Luffy can punch Akainu, hes still loving lava. Haki doesnt stop him from being lava, just that you can hit him. Just like it wouldnt stop Kizaru from moving at loving light speed. People severely overestimate Luffy using haki.

Up until the timeskip, his new moves were usually "hit harder" or "hit more."
