That guy is cheating. He false-shuffles the cards he wants to the bottom and then deals it to his buddy (or whatever, it's been a long time since I watched it). By manipulating the cards a seasoned cheater can give his opponent a good hand so that he'll bet big, and give his friend a better hand so that he can win the pot.
