I bought a Herve today and holy gently caress is it good with some red grapes. I bought the mild variety but it's already pretty pungent (washed rind, aged for 4 weeks). Looking forward to trying the extra ripened and beer-washed varieties. This thread made me realize I should take more advantage of the fact that I'm living in Belgium. Six months I've been here without realizing that for the price of a beer (or two if I'm feeling especially fancy, I'm looking at you Epoisses) I can have a phenomenal cheese to pair with my beer. As a student I just assumed they were out of my league
