So what am I meant to do with the litres of whey piling up in my fridge? Made a couple of batches of awesome mozzarella, then extracted ricotta from the whey, but it doesn't feel right to pour it down the drain. Didn't like it in a shake, and all the hippy sites are just telling me to lactoferment things, which sounds abysmal.
