One of my favorites from my childhood in the south:Strickalean

Strickalean(Streak-of-lean for you yankees) is pork belly, just like bacon. Unlike bacon, which is the meat with a bit of fat attached, Strickalean is fat with a bit of meat attached and ssalted. I've had it prepared two ways, one is cut into smaller pieces and fried so that it curls up and gets crispy(sort of like cracklin's, I guess). The other is where you take a big piece of it, batter it, then deep fry it.

That's right. In the south, we eat deep fried pig fat. Enough so that we've given it a colloquial, charming name. It's awful for you, kind of disgusting...and I love it.

I think that image is just someone's plate of slightly fatty bacon. I'm used to strickalean being almost entirely fat.

There's no way it's supposed to be that greasy. If it's made by more than one person, surely someone's figured out a way that's not deadly?

I've heard them called Methodist Funeral Potatoes, as well.

And the above recipe recipe is like the one my family makes. I don't know where the gently caress that other person got that much oil coming out of them, that's disgusting.

They appeal to my simple can'o'soup casserole type up bringing. I make them as a side dish at thanksgiving or for pot lucks.
