Hybridization is where you cross breed different strains or plants to maximize or reinforce certain genes. How is that not genetic engineering or manipulation?

I can't speak for Giblet, but I think when most people talk about "genetically engineered" organisms they mean something that can't happen naturally, like adding the ability to secrete artificial pesticide, or putting eel DNA in your salmon. Technically you're right though, anything humans tamper with is "engineered."

Hybridization is really little different than breeding animals. If you breed two dogs together, no matter what kind, what you'll end up with is still a dog. The offspring isn't going to exhibit any traits that aren't innate to dogs. GMO plants have had genes that are not natural to that species inserted, such as Roundup tolerance or the Bt toxin to improve insect resistance. If those traits had naturally occurred in any of the plants they've inserted those genes into, it would have been far easier and cheaper to breed those traits into commercially viable hybrids rather than use genetic engineering to insert them.
