I think the cries of "This plan is stupid as this is gonna kill Totsuki" are largely irrelevant because this whole thing, hell Azami's entire character, is about using anything that he gets his mitts on to further his own ends. Hell, I wouldn't be surprised if his endgame was to largely leave Totsuki an automated AzSoc (  ) Indoctrinated Chef Factory, leave it to do (maybe completely break Erina to the point of acting as puppet priest of the new order) and to pull this off on a larger scale.
