Is there any reason why you haven't switched vets? If you don't trust what your vet is telling you and you feel he isn't listening to your concerns, then you should absolutely find someone you can trust.

One issue is that vets are more likely to be blamed if they recommend something unconventional. If the vet recommends Science Diet and the dog vomits all over the floor, the owner doesn't blame the vet. If the vet recommends some expensive and obscure grain free food and the dog vomits, then the vet doesn't know what he's doing and it his fault for recommending that weird crap.

I'd avoid supplementing a prepared diet with significant amounts of liver on a regular basis, as that could lead to too much Vitamin A. An occasional treat is fine, and using other meats should be okay, but there isn't any nutritional advantage to doing so.
