Grain structure is a function of heat treatment. Again assuming a modern steel, if you take a forged knife and a stock removal knife and put them both through identical normalization, quench and temper, they will have identical grain structure.

I've found 3M Cubitron II to last much longer than Norton Blaze, at least for the 50 grit belts I use for heavy grinding.
