Did they just say "gently caress it, that's just how it works, who cares why?" You can study the results of different processes without knowing how they work. If cooling steel faster means it tends to be harder then you try to cool quickly when you need steel to be hard. I think you're giving a huge amount of credit to modern day metalworkers if you think they all have a comprehensive understanding of metallurgy.
