You measure roux by the color of you and your friends' skin. So a white roux would be like Jennifer, a blond roux would be your own skin, then a brown roux would be James, and a dark roux would be Angela.

Got a friend from New Orleans who moved out to California and is homesick for muffalettas. Anyone got a good recipe they can recommend? And if she can't find muffaletta bread in California, is focaccia or ciabatta a reasonable substitute?
