Depends on your software. If you are using OBS you can run multiple instances of it. One instance for streaming which will stream both game audio and mic audio. The other instance can record the local copy of the game and that can be used to record game audio only if you mute the mic in OBS. Then to get a separate audio for the mic you would just record using something like Audacity. Of course you would have to remember to do something to sync your audio for when you put the voice track in your editing software with the movie track. My mic tends to pic up my mouse so when I sync audio I click on the start menu that way there is a visual representation of the audio sync that you can then line up your commentary track to when you edit it.

Really depends on your preference which is better. If you want audience interaction then hitbox is definitely the way to go. Twitch has a larger userbase so it's more likely that you will actually get a random person to pop into your chat than you will hitbox but it has a lag time of about 30 seconds when it comes to interacting with the audience. Hitbox does have a much better dashboard with built in polling feature and access to a bunch of emoticons that can be reached with a simple mouse click. As far as stream quality goes, they are both about the same. They both share the same feature sets now too. So really it again just comes down to preference. If you want you should give it a try and see how you like it.

I've done my last few streams with XSplit Broadcaster, a headset, and a Blue Snowball. One of the options you can do is lower the output volume with xsplit. That's as simple as clicking and dragging the bars next to the speaker icon below the presentation area. That will allow you to decrease the games sound as it comes through xsplit which should help you balance your audio better.
