Yep, that's before it went into the oven. Not very photogenic after. I had a bit too much pasta / too little sauce for the size of dish so it appears dry. I like how the cabbage stains the pasta.

Sliced red cabbage (like 1/4" - not too fine) cooked under foil in hot oven with a little oil for 30 mins, then uncovered and turned a few times for 10 mins. Then mix, add cheese and bake. Next time I'll use more sauce and some ricotta cheese.

Rurutia that cake looks amazing.

Peel, dice and roast squash with some oil under foil for 30 mins then uncovered for 15 til soft and caramelizing. Roast a head of garlic at the same time. While that's going on boil a cup of red lentils in plenty of water with a sprig of thyme and some chilli flakes. When squash is done, combine everything and blend.

If you want the greatest soup though, you gotta make gypsy soup from moosewood.

I like it better with no sliced lemon, but instead some lemon peel (made with a regular peeler) thrown in the pan oil before adding pasta. Garlic, lemon, squash and parsley is a good combo.

Man, I love acorn squash - I buy them whenever I see em. Such good flavour. Dice it, roast it and have it in pasta (with goats cheese & tomato) or with lentils, feta & balsamic vinegar.

What was the gratin recipe anyway?

I confess, I made the risotto the day before. The kale I see most around here is cavolo nero - it's has thick, rubbery, very dark leaves. You can steam it for quite a while and it doesn't go limp or break down so it works well in a gratin. Spinach would immediately reduce to almost nothing and disintegrate.

Gratin recipe was pretty lazy - it would be nicer with a bechamel - but was tasty non the less. I'll be doing it again.

Friy onion and garlic in a large pot, add two large handfuls of cavolo nero sliced in 1" strips and mix well with the aromatics, then throw in half a cup of water and keep stirring on the heat to cook the broth into the kale. Meanwhile reduced some single cream with salt, pepper and lots of nutmeg. Dump the cream sauce into the pot with kale, mix and transfer to a dish. Top with cheese (cheddar & parmesan) and bake until brown and crunchy on top.

Yep just grab a bag of dried green or Puy lentils, boil in double the volume of water starting from cold - no soaking. When they taste/feel how you want them, drain and run under cold water. Quick flavouring is to fry some onion, celery, etc in the pot before adding the lentils and water, and add a bay leave while it boils. Takes about 20 mins from cold.

Yep, serious eats recipe adapted from Plenty.. which I actually have, it turns out! Never opened it.

I use a tiny amount of butter though - certainly not 150g - since the tofu is already deep fried. Used 2x birds eye chillies which was a bit dumb. One would have been about right. Also 2tbsp dark soy instead of 4. That stuff is strong.

Pretty easy recipe though and super tasty.

Everything is awesome in a fried channa (aka gram aka chickpea) flour batter. Just dice some veges - cauliflower, broccoli are good - dip and fry like tempura.
