Does it take a couple days for Playstation Plus status to update when you purchase a new subscription? I got an email letting me know my trial was expiring, so I went ahead and purchased a year's subscription yesterday on my PC. I checked my profile status this morning and I still have an expiration date of 1/10/15. I just want to make sure there's not another step I need to follow to add my subscription time.

This. I renewed PS+ earlier this year and it took until the original expiration date to renew...and yes all the free games get bumped up to the top of your list.

You're a new character, so it's not like people are referring to things you did that you were there for. A guy will reference a thing that he did, and if you played the previous game, you'd be like "Oh yeah, that was cool", and if you didn't, you'd be like "Oh cool, that was a neat story".
