iOS CI is a pain because apple likes to break 3rd party toolchains. I think jenkins + xctool has been fixed but there was a long lag between xcode6 and the fix where the toolset was broken. We are experimenting with scripting xcode bots in the hopes that apple will break their own toolchain less often right now we have some basic task balancing and bots that can run tests, and distribute prerelease builds. We've never done comand-line delivery to the app store since though. At the end of the day any approach you take is going to need mac hardware. And configuring your server heedlessly might not be possible because certain steps need dialog boxes clicked (afterwards it should run headless fine). Everyone wonders how apple does all this internally since the tools change so much release to release.
