Cartoons, kids shows, and anime tend to have the best opening sequences (and often with the best music). In general, I love any opening sequences that are dynamic, with cool music and that set the right tone for the show.

The Batman Animated one's been mentioned already, but here's a bunch of others I like:

Saint Seiya:
This has the distinction of not having any nostalgia associated with it - I didn't know it existed until I was at university. My wife used to watch it as a kid and linked me to the opening one day. When I watched it I could see how the intro could get someone running to the TV to watch it. That 'Saint Seiya' yell at the start is great.

Gargoyles
As much as I love Goliath's voice during the later version of the Gargoyle's intro, the early version lacked narration entirely, and tells its own story purely through sound, music and images. Captain Future:
Was released in a number of countries/localizations, and sucks in pretty much all of them... except the German and French versions, apparently. I grew up with the German version, and rather than some terrible, dated japanese abomination of a song its got a completely lyricless, upbeat sci-fi theme and well-chosen shots of the solar system/wider galaxy to set the right tone. The show is something of a cult hit in German and French speaking countries despite having completely faded into obscurity pretty much everywhere else.

Neon Genesis Evangelion
Regardless of how you might feel about the show, the opening is rather well done, starting off slowly then building to a crescendo, and introducing a ton of tantalizing imagery in rapid-fire cuts.
