Seconding On Food and Cooking Joy of Cooking has seen a lot of use, but not so much recently. Still a staple, as are Alton Brown's Gear and cooking/baking books. I probably reach for Modernist Cuisine more than anything, mostly because of the foundation of some interesting techniques that you can apply in a more reasonable manner. To do a complete recipe is a serious time investment.
