I have a diesel touring, so YMMV but pretty sure I did my e46 rear drivers side brake line without dropping anything. It was a PITA (we made our own lines) and I don't think we used exactly the right routing / mounts, but it's been fine for two years and two MOTs.

Will you be able to keep cruise control / air con / stock gauges etc with the swap? Not that I imagine you necessarily care, just came to mind the other day when I was wondering what I would do with my ratty e46 tourer if I won the lottery.

Gauges are staying stock for now and will work as oem. Adding a big rear end oil pressure gauge on the dash though. Wanted to change to a really nice single screen setup but thousands for anything half decent that's legible so will have to wait a little while!
Air con SHOULD work. We're fitting LS compressor etc and wiring it up. May need specialist help ultimately though. Fingers crossed!

Oh aye forgot you changed the wheel. I guess fitting an aftermarket cruise stalk designed for an LS would likely work if you cared about it.

Car sounds great! Some great roads on the NC500, particularly the west coast side. The Garve to Lochcarron is a brilliant fast road but be aware that it's probably the most policed part of the road aside from the a9.

If you've got time on the way up and down I'd consider making a detour to cut down on the a9 monotony.

The B9176 Bonar Bridge to Alness road is a good detour if you are sick of the a9 on the east side, and it's worth taking a quick drive along the A832 Glen Docherty road to Achnasheen when you are in a Kinlochewe. Both are great roads and with excellent views.
