 In all honesty I don't see her response being apologism. Can someone clue me in what exactly is wrong with it.

Yeah, after you say that, the phrasing of "I had sex with someone. The other party later informed me that the sex was not consensual." does sound a bit dodgy. Really it should be, "I raped someone" I guess.
