CotS tends to be a little softer and more broken up/less pretty which makes it fine for mashing into something else

I got my friends into tinned fish with Caesar salad, they all thought anchovies were super gross until I made it this way:

Dressing:

1/2 tin of chovies (I like Roland)
1-2 cloves garlic
1/3 cup or so of mayo
Juice of 1 lemon
Bunch of black pepper

Blend the poo poo out of it, pour on Romaine, add shaved Parmesan, the rest of the anchovies chopped up, and croutons if you want

A local grocery store I started going to has a great deen selection. I was previously only getting King Oscar, and they were good, but wanted to try some other stuff. I was super impressed with these from Bar Harbor:

Firm without being dry, sweet, and nice mild flavor. I also tried the Ortiz in the jar, which were good but expensive, huge, and honestly not worth it compared to the Bar Harbor unless you want your deens to be big.

I'd be interested in what the cod's like, I've never tried that canned

The last tinned cod I had was super super firm to the point of bouncy, with a neutral flavor. It's one of my favorite fishes in general, but I don't know if I'd recommend tinned unless you love it

The one firm that packs sardines that way under 100 different names always produces a great product. Small, skin-on circular container, transparent top.

At Publix it’s sold under Brunswick for less than KO and I’ve kinda switched over

Ok I wondered who was packaging them, since Maine is not exactly known for sardines. And I think I saw a review of a King Oscar variety that looked similar.

Don't know the company for sure but I think they're mostly from Latvia. Maybe ‎Brivais Vilnis?

edit: I've been slacking on canned fish consumption, I'll have to get back to it soon. I have been eating a lot of fish in the form of frozen fish balls (leftovers of a big batch of laksa noodles). Fish balls are so much better than I would have guessed back before I started using them.

Aldi here had some of those sardines with circular container, transparent top a few months ago. Tried it last month, and I didn't like them. Might have been a knockoff.

Does anybody know some good canned fish shippers for Germany? And fish brands and reviewers.
The offers and prices tend to be very different here. I generally get what I can find at local stores, but I feel like I should move up in quality.

I don't mind the Beach Cliffs in hot sauce, for eating sardines by themselves.

Used some nicer ones and made the deviled eggs sardines from the tinned fish cook book, turned out very good. Can't remember which brand we used, pretty sure they were Moroccan style.

I've got a bone to pick.

Tried the Sea Tales sardines in olive oil with chili. Texture was so-so, they broke apart real easy, but not mushy. Very little chili taste, if any, but I'd get them over King Oscar in the future, pretty good all in all, especially for being about 60 cents a can cheaper than KO

According to Crown Prince, their oyster tins meet or exceed US federal food safety and purity standards. However, California has much stricter standards, so CP includes a Prop 65 (the relevant CA law) warning on all of their tins.

To me, that looks like a drat interesting idea for low effort oysters rockefeller, and I'm very tempted to try it. I probably would swap out the tin for something else, though I'm not sure what I have on hand that would work.

Not great for presentation, but a small muffin tray would probably be an alright imitation of the typical serving on the half shell and easy to bake

I like how they dumped Tony Chacheres on it like tinned oysters needed more salt. Also Oysters Rockefeller is supposed to be green, maybe this would be better as Poor Man's Casino

Serving them in the tin is the fancy michelin star way.
If I made some for myself I would probably go with one of those big flat cups that I use for french onion soup.

Extra steps & all, but you could cook the tinned oysters separately then put them back in the tin for plating.

do they still meet the safety and purity standards after being heated?

Assuming this is ceramic, this is what I’d use. Even if a can is BPA free, it is still lined to prevent corrosion. Those chemicals might be fine at canning temperatures (about 250f) but in an oven that might be at 375 or 400 I wouldn’t trust them. One or two cans of that in a lifetime is probably ok, but it’s not something I’d be doing on the regular.

(Found the drop-down on Etsy, that dish is porcelain, so assuming it’s an oven safe glaze it’s just fine.)

I guess if you're cooking oysters in a way named after a robber baron, the $20 tiny casserole dish is kinda appropriate
