I made a pan bagnat with some French bread, garden tomatoes, basil, garlic, kosher dills, onion, red wine vinegar, salt and pepper and KO dines instead of the usual oil packed tuna. Wrapped tightly in plastic and rested overnight. Was pretty good but needed more acid. Next one will up the pickle and vinegar percentage.

You could just add a little cornstarch slurry...it doesn’t take much to thicken stuff, so if you’re counting carbs it won’t make a big impact. Cauliflower is awesome if you treat it like it’s own thing, not a zero carb starch substitute. Mashed cauliflower doesn’t taste like mashed potatoes but it’s still loving delicious. You can make roasted cauliflower and bake it with cheese sauce like baked Mac and cheese. It’s not the same but it’s still super good

Looks like it would hit a bit like Rhode Island style calamari which is one of my favorite things

Anchovies are not actually preserved/pasteurized like deens, just salted, and can be expected to bulge over time from some really buff but ultimately harmless bacteria, especially if left in a warm place, sometimes before the expiration date. I got my friends into tinned fish with Caesar salad, they all thought anchovies were super gross until I made it this way: Dressing: 1/2 tin of chovies (I like Roland) 1-2 cloves garlic 1/3 cup or so of mayo Juice of 1 lemon Bunch of black pepper Blend the poo poo out of it, pour on Romaine, add shaved Parmesan, the rest of the anchovies chopped up, and croutons if you want A local grocery store I started going to has a great deen selection. I was previously only getting King Oscar, and they were good, but wanted to try some other stuff. I was super impressed with these from Bar Harbor: Firm without being dry, sweet, and nice mild flavor. I also tried the Ortiz in the jar, which were good but expensive, huge, and honestly not worth it compared to the Bar Harbor unless you want your deens to be big.
