Despite being a comedy, I feel like Hello from the Magic Tavern ends up falling into this category. Even though it's improvised, it remains surprisingly consistent in its world-building from episode to episode and really fleshes out its lore and plotlines as it goes on (while still mostly aiming for good punchlines). It's one of my recent favorites.
