I just heat up the pan to a moderately low temperature, add cooking spray (or butter or whatever,) crack the egg in, cover the pan, and let it sit for 3-4 minutes (depending how you like your yolk.) There should only be an ever so slight sizzle sound. Comes out perfect for me every time. YMMV; you'll probably wanna experiment with your heat + cookware.

That's probably one of my favorite cooking videos.



For French style scrambled eggs or omelettes, I'll usually start off with a medium-lowish heat and constantly move the eggs around 'til they've started coagulating,. Then I'll crank up to high, while still constantly stirring/folding, to get the texture that I'm looking for (though I have a ceramic glass top, so "high" probably wouldn't be quite the same as "high" on, say, gas in terms of speed. Needless to say: watch your heat.)

Finally got around to making hamburg steak. Overcooked my egg, though, so I didn't get a deliciously runny yolk. :(
