I could actually go for some mac and cheese right now (w/ bacon in it also ofc {goon, duuuuh}) but imma probably just cook some lo mein noodles and eat the with my left over stirfry since i am trapped in my apartment since a water pipe (an under the street one not a BONG!!!! LLOL ) broke on the street where my car is parked and DWP is out there tryign to fix the street which is hosed as all heck so they closed it, I hope I can get to work tomorrow but also I kinda hope I cant so I have an excuse not to go, I cant even take my other car cause my bmw is in the parking garage and my roommate is parked behind it and he and his girlfriend are out of town until tuesday on a trip for their 4th anniversary and like gently caress imma uber to work like im not paying to go to work suck my drat balls, God Blesthat is my mac and cheese story

The next time I'm making some, I'm using muenster and probably swiss. my actual cheese breakdown is 1 part velveeta, 2 parts sharp cheddar and 2 parts gruyere. The velveeta firms it up a lot, allows you to whip some air into the heavy rear end cheddar and makes it even cheesier. you just cube it up and add it near the end of the melt. Really mine is a bit different as I make a béchamel, but as far as me praising the recipe, its close enough that I know its going to taste good and be 'good enough' without spending a half hour on the stove. I'd definitely use Gruyere over Swiss.
