It's used like a condiment usually on papaya salad but maybe other stuff too.

When you order your papaya salad (which is made with unripe papaya so you should not be thinking of something orange here but something pale green) you can say "with crab" on there and crab in Thai by the way is "poo."



It's very hard to find in the US but some Thai restaurants in Queens have it.
