They do this in Thailand OP It's used like a condiment usually on papaya salad but maybe other stuff too. When you order your papaya salad (which is made with unripe papaya so you should not be thinking of something orange here but something pale green) you can say "with crab" on there and crab in Thai by the way is "poo."  It's very hard to find in the US but some Thai restaurants in Queens have it.

But like its probably not popular because it doesn't work out so good. There's probably been people who have tried and just found out on their own it's not that good, but theres probably also culture with folklore warning against it too. It's also possible you are the first person who has thought of it too. Who knows, the universe is vast and bewildering and I am small.
