Lambda functions can be annoying to call over HTTP, you have to set up an API Gateway instance to make it possible and then if you want to put that behind CloudFront there's even more weird tweaks to get it to work. I wouldn't recommend them for HTTP consumers until they sort that out but they seem okay for responding to SNS/SQS/etc type events.

Redshift "UNLOAD" to S3 which gives you CSV files, then a script to turn them into json and batch write rows to Dynamo?

I think there's a hard five minute limit on lambdas too so if the query runs long you're in trouble.

If you're able to boot whatever it is from grub you might be able to copy the steps from here: https://mirage.io/wiki/xen-boot on how to do it for unikernels and just substitute whatever disk image you're putting on there. It looks like the pv-grub image number may be outdated (and it varies per region anyway) so check that if you do want to try it that way.
