I think he said something about wanting to make his book as approachable as possible since in the US, most people measure stuff in imperial units, and portion ingredients using volume rather than weight. I too wish that everything was just listed in grams (though I have no beef with fahrenheit since it's the standard here), but it is what it is. Still a fantastic cookbook.
