Edit: Eh I was thinking of something else with the gigabit adapter. I just have mine hooked up with UGreen USB2 Fire TV adapters which works well in practice for me streaming most everything including a lot of high bit rate stuff from Plex. As far as interfaces go, yeah they finally seemed to shut down the ability to change the default launcher a couple months back. Sucks. You can set up kids profiles which are more locked down and show only 'kid friendly' stuff, but in a lot of ways that ends up just being annoying to deal with.
