I'd been sauteeing my veggies in a frying pan but last night after a few vodkas convinced myself that a wok was the correct tool for the job. 25g of butter, 250g of mushrooms (I went with chestnut for the colour, but any fresh shrooms will do) and 100g of sliced spring onions.

Keep the heat moderately high and keep the vegetables moving around the pan at all times. After 10-15 mins the mushrooms should have given up their moisture, gotten a nice colour and be ready to serve.

It's a recipe that I got from an Asian cooking class at the CIA in NY:

1 Cup Light Soy Sauce
1 Cup Sake
3/4 Cup Mirin

I then use some of the sauce to marinate the meat before grilling or finishing in a pan, and then thicken the sauce even more by simmering in a pot and adding a little cornstarch slurry. I pour the thickened sauce over the meat before I serve. I also like to add thai red chiles to the sauce with the apples to add some heat to it as well.

I've made teriyaki a bunch of times and have never heard of the grated apple step. Is it noticeable and worth the effort?

Well, to be fair, I've never tried it without the apple, but I do it with granny smith apples and feel like the tartness adds something to it. Saw some monster shrimp so had to use them for something.



Shrimp and cheese grits. Used some leftover tomatillos in the sauce which gave some nice acidity to the sauce without adding lemon juice.

I made scallops in white wine sauce with black garlic, paired with herb-crusted steak. It looks nothing like that, and now I'm insanely jealous.

3 cloves garlic, minced
1 Tbsp ginger, minced
2 Tbsp red curry paste
2 Tbsp oil, I like sesame

8 oz diced chicken breast

Cook until just barely opaque, 5-6 minutes; then, add

6 oz coconut milk
32 oz chicken broth
16 oz water
2 Tbsp fish sauce

Bring to a boil, add salt/water depending on your desired saltiness; then, add

6-8 oz rice vermicelli noodles*

Stir it all up, ladle into bowls, garnish with scallions, cilantro, lime juice. Takes about 20 minutes to make and it's as good as it looks.

* If you're cooking for one or are otherwise planning on having leftovers, I do not suggest adding the noodles to the pot, and would instead highly encourage you to add a portion of noodles to your personal bowl and pour the soup over them. The thin noodles will NOT reheat well because they will turn to mush and you will be sad.
