We were in the mood for lamb, but my wife wasn’t feeling turd-shaped food. Lamb burgers for her and kofta for me.

Hit them with some homemade tzatziki and chopped up some tabouli. drat good night for gyros.

Shakshuka!

I had a bunch of potatoes so I cubed them and added them to the mix instead of cooking rice. I actually might prefer it this way.

That looks really good, what’s your recipe? I love bell peppers but I need recipes that still work without them because I cook for people who don’t

My wife used to hate bell peppers and I asked if she ever had them roasted. She hadn’t and I made them for her and she actually liked them. Then for a while I could cook with them as long as they were roasted red peppers. She just started eating them unroasted

Coconut Shrimp with steamed edamame and honey sriracha sauce.

First time making coconut shrimp and it really wasn’t too hard at all. Came out great and will be making it again.

Pork roast stuffed with prosciutto, provolone, and spinach.

Didn’t get a picture of the fig and mushroom sauce, but it really sent it to another level.

Is this with ground beef? Were you happy with it and would you mind sharing the recipe? Do you think it'd work with Soy Boy Meatless Crumble Substitute? Wife and I have been forcing our selves to do meatless meals at least once a week. We are struggling with ideas as most of what we cook was centered around a protein and we just haven't flexed that muscle. Doesn't help we have 2 slightly picky kids who struggle with 'different' veggies.

Here’s the recipe:

If it was me making this, I probably would have gone meatless. That’s a bit of a tricky maneuver for my wife, but I’d say trying this with some “ground beef” tofu or something would be pretty drat good too.

Feeling octopus tonight…

Grilled octopus and lettuce salad with sliced radishes and a simple vinaigrette.

Original plan was to have the octopus over a cold fennel salad but I couldn’t find any fresh fennel after checking two stores. So I went with grilled lettuce. Never had grilled lettuce before, and honestly not hating it. The radishes really tie the whole plate together. Would make again.

Tried to make eggplant rollatini, but I realized I didn’t have any tomato sauce. So I make it without the sauce and served it like bruschetta over a toasted baguette. I actually really liked it this way.

Sausage & Peppers tonight with some rigatoni.

When I was growing up my mom would just serve it on big rolls as a sandwich. My wife prefers it over pasta. I guess both are good, but drat it’s hard to beat a sausage and pepper sandwich.
