I have this with cucumber too, and a little bit on watermelon but I like it enough to ignore it. My doctor suggested it was related to my allergy to ragweed, based on some genetic mutation like the cilantro one. I also hate the way people eyeroll when I talk about it, it's really really really bitter in cucumber, to the point of it being almost inedible even with just a little bit in a salad.
