I also like the 8-Bit Guy. He focuses on computers and consoles from the 80s-00s, with a mix of reviews, "how this stuff works," and some restoration process videos. Fairly dry, but pretty interesting

Yeah, unfortunately it seems like youtube in general caters to shallow stuff. I really wish there were more in-depth videos, since the multimedia approach can be a really great way to learn stuff, but I can't argue the effort-to-payoff ratio.
