My wife used to sell wine, and is just generally into it as a hobby. A lot of it is the way that unstable chemicals drift around and mix with each other to make tastes and smells that are not related to the ingredients (grapes, yeast, alcohol, water). Since the smell is basically artificial and slightly random, it probably doesn't smell like anything in particular so your brain tries to attach it to something it recognizes. So it might taste like some kind of generic idea of fruit, but no one fruit in particular. Kind of like smell version of those memes that use AI generated images to let you see what having a stroke is like.
