Doesn't the movie explicitly state something just before this? Gloria says "You don't hate me, you hate yourself" or something to that effect. It's not that he's lost control of Gloria, but that he never had any control over her or his life at all - exemplified by the bar.

Thing is, Oscar doesn't care. She understands, but also doesn't stop drinking. She care ("cares"?) but doesn't do anything of meaningful change to stop it happening.
