OP i recommend reading some film theory. that field is full of good general observations about how film works. You will find new ways to appreciate almost any movies you watch. It sounds like you are also put off by the scale of undertaking of even a modest narrative feature film, which I can relate to. I'd recommend exploring avant-garde films, which are mostly very quaint, yet explore ideas that conventional commercial films (even independent and/or foreign films) rarely approach.

Not to criticize OP but it sounds like you are having trouble getting in touch with your feelings when you watch movies. A solution to this might be to seek out films with very extreme content... "torture porn" for example, like the Guinea Pig series. There is more to any apprehension of a story than purely cerebral aspect and films that stress the visceral, reptile-brain side of things to the near exclusion of all else might be something you could explore. You could also think about types of traumas you've had in your life and look for films about them. Anything liable to disturb, offend, repulse, cause an intense confrontation between you and the film. It might be preferable to something that just bores you.
