Deceitful and black-hearted, perhaps we are. But we would never go against the Code. Well, perhaps for good reasons. But mostly never.
Start with sharandar and dread ring and maze engine. Also finish the first half of dragons if you haven't yet. Do the random queues you have unlocked each day too. Get rings with protectors seals, and consider buying the chultan crafted weapons and drowcraft underwear on the ah. Run the epic dungeons you have unlocked for other gear. Try to get r7+ enchants and runestones in all slots of your gear and you active companion and it's gear, at least blue insignia in all mounts. Then start saving for bonding runestones and VIP...

Slot your best Azures into utility slots for the exp bonus, and don't worry about any of the rest until you reach level 70. Find a guild, even a bad one, since guild dailies really help leveling.

Darks in utility slots. Some of the people I've done endgame stuff with can book around dungeons at insane speeds, and for melee types or tanks that may be good for more than just kill-stealing.

The grind to be ready for the castle will be a long one, but the rest of the campaign( apart from the top rank hunts) is very accessable to anyone at 70. You get a set of gear right at the beginning of the questline that will catch you right up.

Leveling to 70 is pretty quick in this game. If you can, join a guild, any old guild. Even the deadest guild will give you access to three daily quests based on doing things you'll already be doing (a leveling dungeon, quests in a leveling zone, and killing level-appropriate enemies) that give huge amounts of xp.

Been a while since I've played, but as I recall it's only really Epic Temple of the Spider where this is a problem: there are shortcuts bypassing mobs everyone is expected to use and following without them causes that kind of trouble. In most of the other dungeons that didn't happen. (In the leveling dungeons people run ahead, but can solo the bosses in seconds if they have to.)

So someone on reddit just claimed that healing is an actual role again. Is this true? Because if so it might be worth dusting off and respeccing my old DC.

Yes, it's as almost a real mmo now, with threat management and heals and everything. Lifesteal was done away with.

What's the sub/dlc/f2p model? Is there some sub that gives access to everything, or do I need to buy it in bits and pieces?

All the content is free; the sub gets you a bunch of critical qol enhancements and a daily lootbox key, and can be paid for with currency that can be obtained f2p.
