You can also tell your ships to dump what they can't unload. Or make them stop at one of the NPC traders and sell it there for small change.
I just dump leftovers mostly, there is more where it came from.

Absolutely, and it will really gently caress you over if you do a quest, but don't have room for the rewards and it is dropped in the ocean. Good luck finding the correct crate.

You might also just not have enough population.
Building a ton of worker housing somewhere and giving them beer is a good and stable income.

Production buildings for building parts are also rather expensive and overbuilding will slowly tank your economy.

On the soap business, you can find a specialist that replace the inputs for the soapmaker with wood. Making it wildly profitable and easy to massively scale up.
