Sideways has sadly been dormant for about the last two years, but he's still got great content. His channel is an overall examination of music theory and music in soundtracks, but if you enjoy examinations of musical theater, he has some good ones comparing the movie versions to their stage musical counterparts. He does have a tendency to talk kind of fast, so you may want to try setting the video playback to 1.75 speed.

I wouldn't say Tribal People Try is one of my favourite youtube channels but it's definately worth a watch. It has 4 people, sometimes with special guests, trying food from all around the world. It's fascinating how they react to something they have never seen or tasted before which most people in the west would think are mundane.

Watch them eat Mac&Cheese

Recently they even started to travel with the earnings they made from youtube. For one of them it was his first time on an airplane.

Youtube recently demonitised them from reasons they are not sure of. Likely some stupid copyright thing. To whatever company did that, this is free advertisement, you know?

If you like your cooking chaotic and (sometimes) successful, I recommend ANTI-CHEF. He has a series called Jamie & Julia where he cooks through a bunch of Julia Child's Mastering the Art of French Cooking. He has other series too, such as Jamie & Chef where he cooks recipes from Michelin star rated chef cookbooks, and Cookin' Around the World - recipes from around the world, natch. He's charismatic and partially airheaded, so it's quite entertaining.

I got some recommendations to make:

TheRasteri makes videos about creating retro technology and repairing DJ equipment.

fjamie013 takes photoshop fix submissions, and instead improves them.

Beyond Ghibli is a channel dedicated to Japanese media (ie. anime, manga, video games, et cetera), but instead of being reviews they're just recommendations for where to start.

FooneTuning is a channel for doing the absolutely weirdest things with hardware.

Treasure (Re)Creation Channel is a DIY channel who does restoration of all manner of various things, and then (unlike most other DIY channels) use the restored objects to make something with.

J. Kenji López-Alt is a SeriousEats chef who sometiems cooks for himself, sometimes at night.

Archipel does documentaries about Japanese artists and craftspeople.

SoloTravelJapan travels around Japan on ferries, trains, and even planes, alone.

Lady Emily is the editor for Sarah Z, and does media analysis.

Tom7 / Suckerpinch commits computational heresy and publish papers at SIGBOVIK, the association for computational heresy.

Laura Crone does some media analysis, but also touches on acting and stage plays.

He did one on Rick Astley's hit, and shows just how brilliant of a song it is.

Stock, Aitken and Watermann were the Max Martin of their era in that they produced a lot of hits, and had a lot of people trying to sound like them.

Please share your favorite minority Youtubers. I realized recently that the vast majority of who I follow are cishet white men algorithms pointed me at and seemed interesting in some way.

I would rather not have pop culture commentary, cooking channels, music channels solely dedicated to covers in X style, media reviews, or vlogs dedicated to someone's day-to-day life unless that life is something not common. The only channel like that I follow is Tom Pemberton Farm Life, for example. If you think something is worth being an exception to these, convince me.

PBS Voices on YouTube has a few shows I watch, I just found out they got a new one called "Dead and Buried" which looks good, I'll give it a shot. The algorithm probably recommended because I'm subscribed to "Ask a Mortician" who has done some dives into black and queer burial in the USA.
