Sekiro's parries have a noticeably longer window, but I think the most important difference is this: if you try to parry in Sekiro, but miss the window, you still block the attack (it's just not a parry). In these other games, pressing the parry button when you're not extremely confident about the timing is an enormous risk; if you're a frame too early you're going to eat a giant demon to the face. So it's both miserable to learn and too risky to actually use until you do. And that's not to mention all the boss attacks that just outright can't be parried.

Meanwhile, the roll button is right there.
