i hosed up a run of homemade yogurt by using an unfamiliar milk brand and not scalding it long enough so it didn't set. the runny yogurt still tasted good so i said gently caress it and turned the whole thing into ricotta. came out quite sour with a yogurty flavor, actually very good. found some jumbo shells forgotten in the back of the pasta drawer so i used the ricotta to make a bunch of stuffed shells. rollercoaster of emotions folks

so the pork bones, chicken skin/bones leftover from last week's smoke went into the instant pot along with all the limp produce in my fridge plus an onion and dehydrated garlic. The broth is insanely smoky and look at that fat on the top!

Gonna make tortilla soup with it. Pics later

btw I've cut my meat consumption by probably 75% in the past year by doing things like (in addition to more vegetarian meals) using less in each meal and choosing cooking methods that allow ultimate meat flavor extraction.

Cook chicken thighs or quarters instead of breasts and do it in the air fryer. All that schmaltz that pools at the bottom is a great addition to meals to give them 90% of the pleasure of eating meat.

I still cook more meat than I would for just myself because my kids need to calories and it's really hard to do it without relying on either meat or cheese. The next step is to cut back on cheese for myself as its way too much of a crutch. A lazy way to make mediocre dishes tase way better

I dig it. My wife and I have been doing more meatless style meals in general. I mean I still prefer meat style proteins but it's been nice to branch out.

I used to do mass balance calculations for stuff like carbon emissions and I've been wanting to make a website forever on the topic regarding food.

The biggest thing I've realized is that a huge percentage of the beef we consume is totally ridiculous. Totally wasted in stuff like tacos, meatloaf, meatballs, chili, sausages, mediocre roasts and deli meat when there are WAY less carbon intensive meats/veggies that are acceptable or better substitutions. I save beef for things like smoking, a really good steak, or cheeseburgers where the flavor of beef is a central part of the experience.

(sweating) While I'm trying to reduce my carbon footprint by reducing beef intake; I will fight a holy righteous war to earn my selfish right to consume carne asade tacos. I'll considering laying down my steel if we substitute pork though. On a more serious note; we've generally reduced our actual beef consumption a massive amount. Though I can't really take credit for it; it's more really that my wife just generally doesn't enjoy beef.

At the arrhythmia household we make our tacos using lentils instead of meat. Very tasy, and also powerfully increase my farts (very important)

yeah when I have new Mexican green chili stew in the freezer (not having access to a billion different varieties was the worst part of leaving Colorado), I do fry bread with mushroom taco meat (or soy crumbles or ground turkey) and green chili

wife went overboard at the Mexican bakery. She's pregnant so it's pretty par for the course. I've got these really great looking rolls and they look almost like French bread. Trying to decide if paté and kim chi bahn mis or carnitas sandwiches is a better idea

I've got a bag of frozen livers (they go in when I get whole chickens) in the freezer so I'd have to make the paté. But yeah I may do that
