I agree with this plan. You gotta keep that corner built-in cabinet.

My ideal plan would require putting the stove under the window (or removing the window)… whatever it takes to keep that proper outside-vented hood.

You also need to consider placement of counter-top appliances like microwaves, toasters, and coffee makers. Good luck!

Do those tiles have a 1:2 ratio? You could do 2 vertical, 2 horizontal, in a checkboard pattern (like a loss edit, see below) or fat herringbone.

Most kitchens in houses I lived/visited in the US had the sink under a window, and the stove/oven on the opposite wall, or a parallel galley setup without windows.
Most kitchens in houses I lived/visited in Japan have the sink and stove (no oven) on the same unit, with a dish cabinet on another wall. Older houses put the sink/stove unit against the wall, with a dining table nearby (DK "dining-kitchen.")
House floorplans have changed to open layout (LDK "living-dining-kitchen"), with the sink and stove facing the living room. It's very nice to be able to see the living room while I'm cooking.

All our cooking basics are in the pull-out drawer under the stove and I just realized this is possible because we don't have an oven.

Put the coffee maker in the window over the sink, or use those outlets to the right of the fridge. A shelf or rack over the trashcan(s).

The standalone stove is frustrating.
Some kind of flat space and rack near the stove would help a lot, the wire rack is an ok start. Something above the stove eventually, but for now you could try magnetic hooks or baskets on the side of the fridge to hold tools, oil, salt, and other essentials.

I think that's the best you can do without replacing the stove or fridge with narrower appliances.

The coffee zone rack is good, something just like that behind the stove would be comfy.

I don't think you'll find a north-south cabinet with east-west shelves, but there might be something like a phone/fax stand or kitchen appliance rack that fits.

Cubes and storage baskets are adequate for many purposes.

Put the statues away in a box to be evaluated years later when they're not so emotional.
Those bamboo looking furniture are cool. Colorful walls would make them pop. Navy, gold, or some tropical print wallpaper. Embrace it.

You can get backsplash stickers, or aluminum shields (splatter screens) that make a little wall around the burner(s).

I live outside the US so my local stores are different, but Home Depot .com shows lots of results for "peel and stick tile" or "peel and stick wall decal" that can cover a whole wall. IKEA has shelf and custom options.

However, I don't see any of these cheapo oil splatter guards, which are super common here. I have a one-pot splatter screen that I use around the fryer.

Tatami is cool and good but it's pretty hard to clean when food/drink gets in the gaps. Sitting on the floor too much kills my back and knees, even if I use the tiny flat-bottom chairs.

The tatami storage benches are cute or you can go hard and do a modular hori-kotatsu set up like the top photo here.

Our bathrooms have different flooring and molding (white/marble) than the other rooms (wood/wood). The transition strip under the doors make it fine.
