There are American wagyu from Japanese black cattle where they brought over like 10 bulls and then 10 cows. So if it's "American Wagyu" it just has to come from cattle that are over 50% from those lines. There are VERY FEW purebred wagyu cattle in the US but there are plenty that are somewhere in the low 60s high 50s. And yes, the ground wagyu beef is still something like 75/25 lean/fat grinds, which is taking meat from Not The Steaks area. Ground round still counts as ground beef, but it doesn't have the same super fatty marbling.
