making a big old mac n cheese casserole today with homemade cheese sauce, a crusty baked top and some jerk chicken on the side. a nice hearty meal to celebrate the end of the week

pretty simple - make a light roux, just enough to cook the flour, slowly add milk while whisking constantly to make sure it stays smooth, reduce temp and bring white sauce up to temp, then simmer until it thickens enough to coat the back of a spoon. remove from heat and then add a melty cheese like some sharp cheddar a bit at a time to make sure it all mixes/melts, and then you got cheese sauce. if you wanna get fancy you can add spices and stuff, but i don't when i'm making mac. in terms of quantities i usually shoot from the hip but to feed 4-6 (my family), i do something like 3 tablespoons of flour and butter for the roux, 3 cups of milk for the white sauce (aka bechemel), and maybe 2 or so cups of shredded cheese at the end
