Castle Crashers is a great beat em up for coop. Helldivers is pretty fun though it works better online where each player can have their own screen. A lot of people like the quick and dumb action of Broforce but I don't personally enjoy it.

I love how tough Overcooked/Helldivers can get but I agree that they ramp up to that level too quickly. I'd prefer a lot more levels that can be played casually with separate challenge campaigns for when we want to really test our group. Oh yeah, also add Cuphead to the list for the more difficult cooperative games.
