Hi GBS, I was lamenting the lack of good ramen in Columbus so I tried making it from scratch. It was a 4 day process making the broth, flavoring, aromatic oil, and toppings but it was really fun and it turned out way better than expected. I liked it a lot and you should try it out if you have hobby time to spare ^^ finished product the spread the ingreeds after an overnight soak to get rid of the blood and stuff the cleaned pig pieces removing the scum, low simmer 2 hours halfway through the 10 hour rolling boil cook the final product after a night in the fridge. super gelatinous and woobly popping the heads and guts off sardines and anchovies to make the flavoring, with kelp two batches of ramen eggs (ajitama) cooked at 6' and 6'30" making the menma, bamboo shoot topping preparing the kikurage mushroom topping piggoly fats to be rendered for the aromatic oil This video inspired me to make it and was the base recipe: https://youtu.be/F-TQjevcOf4 His channel is really good too btw, definitely recommended

Well the finished product doesn't look like some one already ate it and then vomited it back up, so you're already better than 90% of the people who make their own food and photograph it.

Very nice. I attempted homemade tonkatsu ramen 3 or 4 years ago. Spent all weekend on it and the broth tasted awful. I don't normally let a bad dish get me down, but with the time and effort spent on it, I am still a bit bitter about it. The recipe I used had chicken feet and pig trotters in it. So I may try to redeem myself with a recipe closer to what you're working off of here.

i dunno much about ramen but i make normal stock and a rolling boil for 10 hours sounds like a great way to cook out all the vitamins and taste. low simmer only imo

It looks really good! That's a lot of food so I hope you have someone to share it with or can eat it before it all goes bad. Don't let the effort go to waste! I myself will be making tuna noodle casserole for my family and some down on their luck co-workers. It will be delicious but not photogenic so no pics.

Tonkotsu ramen is fantastic, what noodles did you use? I love doing a Tokyo style Shoyu ramen, chicken based. Gotta have that slow cooked pork belly chashu tho. Highly recommend haku baku ramen noodles if you can get them. Absolute favourite pre made noodles for ramen.
